Hojicha is, as the name literally tells us, roasted tea. To produce it, the finished basis tea (Sencha, Kukicha or Bancha) is roasted in pans. The three-year tea consists of wooden, roasted twigs only. Hojicha teas are rather smoky and bread-like in taste.
