A Zhangping Shuixian of great quality being produced in small quantities, lightly roasted over charcoal. Very well produced, with a more pronounced oxidation than is usual for Zhangping Shuixian. The oxidation takes place at room temperature and only the second tossing of the leaves takes place in an air-conditioned environment, resulting in a greener freshness.

Zhang Ping Shui Xian Zhang Ping Shui Xian is the local tea of the county-level city of Zhangping, in the north-east of Anxi County and is one of the Minnan Wulong. Here, only the tea plant varietal of Shuixian is grown. These teas are produced in a fashion similar to the other Minnan Wulong, except that the traces of the oxidation from the leaves are not removed. The leaves are then fired in heated turning drums and formed into small pillows, as opposed to small lumps. Zhang Ping Shui Xian are fuller, richer and rounder than the other Minnan Wulong.
Storage:
This tea was produced in a relatively green manner, but sufficienty oxidised and then roasted, it can thus be kept at room temperature and even be aged.
